        I think you could be right about the 1841 census Carolyn, still in same borough as where she said she was born, Hamstead, (1861 census) also thank you for the welcome.

          Just revisiting this, and stumbled across a tree with these as parents with all of these symmons children (clearly they could be wrong):

          I did find a marriage of Luke and cert says he is a butcher and so was his father (could be John b 1781)
