Maybe I am being naive here but why would a Wheelwright in the 1850s be so poor his family would end up in a Workhouse ? wasn't it a good occupation ?

If he had had an accident and was unable to work temporarily, I think his family would have received out relief, as it wasn't his fault he wasn't working.
However, if he was seriously ill and didn't look like recovering, perhaps the family had used up all their resources and all had to go into the workhouse.
Maybe he went bankrupt? Was he a master?
