Can't see any WW1 records but perhaps he had gone to NZ by then.

Can't see the family in 1891 but I expect they will be badly transcribed.

He is shown on the New Zealand Army WWI Reserve Rolls, 1916-1917 (Ancestry)
ION, Walter Ernest, Cabinetmaker, Old Mill Church Road, Epsom.

The entry appears to be taken from a book entitled:
The Roll of the Second Division New Zealand Expeditionary Force Reserve.
The entry for his name has the letter D in front of it, which according to the preface indicates he is in Class D = the reservist has three children

Walter Ernest Ion (cabinetmaker) also appears on the NZ Electoral Rolls 1853-1981 (Ancstry)
1911 / 1914 / 1919 - living at Church Street, Epsom. Martha Ann also at the same address
1928 / 1935 / 1938 / 1946 / 1949 - living at 26 St Andrews Road, Eden district. Martha Ann also at same address. In 1928 & 1935 there is a Bernard Ion (clerk) living at the same address.
