I have found Joseph on the 1851 census, with his parents:

Robert Bryer aged 65 carpenter from Bishops something, somerset
Sarah Bryer aged 36 no occ, from Frome, Somerset
Sarah Ann Bryer aged 5 Glos, St. Georges
Joseph Bryer aged 2 Glos, St. Georges

Source Citation: Class: HO107; Piece: 1953; Folio: 456; Page: 28; GSU roll: 87353.

Josephs marriage cert will give the name for his father so you can double check this is the right line you are following.

in 1861 Joseph is working as a servant:

I would say it is highly likely that he was married previously, I will have a look to see if I can can find him in 1841, though this doesnt give relationships by using numerous sources you can usually pinpoint the relationships.

I cannot find him positively, there are two Robert Bryers that show on the 1841 one with poss wife Mary and one without, but with children. The only way to be 100% would be to get a copy of his (Josephs) birth cert, as this would give his parents names.
