Which site do you use to look at the censuses?

On Ancestry, the 1861 England census window (as with the other census windows) has slots at the bottom where you can slot in the known reference information. The surname appears transcribed (with good reason) as SHOUTT. The Head, George, is recorded as a lighterman.

There's a good candidate for a baptism record for George at St John Horselydown, Southwark.

If "lighterman" is an accurate occupation description, then there are excellent records to be found.
