A while ago the book "Labouring Life in the Victorian Countryside", by Pamela Horn was recommended to me. In hunting it down I discovered several other titles by the same author. I have found them invaluable in fleshing out the lives of my ancestors, wages, working and housing, leisure etc. They are out of print but available at very reasonable prices on the Abe Books site.
