Probably the easiest way is to do a screenshot of the pdf file, which you then open in an image handling program and crop so you just have the pdf image left - then save as a jpg.
I use Photoshop Elements and I can open a pdf in that and then save it as a jpeg file. Not sure if you can do that with any other graphics programs though.
If you select the whole page or the bit you want with the "camera tool", it will copy that image to the clipboard. You can then load the image into Paint or any graphics program and save it as a jpg file.

There are plenty of programs that you can download to do this, but there is also an online converter that you can use here if you don't mind uploading your pdf file to their site. They're deleted after 24hrs if you don't opt to delete them yourself. You also have to become a member to get full conversion benefits.
I think you will find most such programs will only change the file format from PDF to Word and the result will not be a text file but an image on a Word formatted page.
To convert a PDF file to text one needs an OCR (Optical Character Recognition) program such as Abby Fine Reader or Omnipage Pro etc.
