I can't see anything that jumps out immediately Patti but if this was on the research board you might get more help. Perhaps it would be an idea to ask a mod to move it. Also, it would help if you could tell us where they were in 1871 and 1891, to save us having to look for them on the census.Chrissie passed away in January 2020.

It is just possible that the whole family were in Ireland during the Census of 1881?? Maybe someone died in Kilkenny, or some big Irish family event took place!! My OH has a few missing on census lke this and we reckon they have gone back to Ireland for whatever reason. Sometimes they returned to Ireland to have children baptised in the church the parents/grandparents were baptised as English Churches were never as good as Irish churches!! I notice that Jacob was born 1880 so a baptism in 1881 in Co Kilkenny may well have been on the cards.
Was James Speck in the army and met his wife whilst on a spell of duty in Ireland? If so, could they have married there? Try oversesas section on Findmypast to see if you can find marriage cert there. Is she a Catholic and he a Protestant? If so and if she had strong family ties, then pressure may have been exerted on her to have the children baptised in a Catholic Church, preferably in Ireland!!
Otherwise they are mistranscibed somewhere!
We had a lot of trouble finding O'Sullivan in the 1881 census. It comes up as Sullivan and Osullivan mainly, so maybe there is a glitch with the Mac part of the name?
