I think that the first letter is an S, after looking at other capital s's on the page, and the funny tail at the top may be from the writing above. It almost looks like Serv..

I like the Hen Farm but I think I have to agree it looks more like Serv maybe she served the mine owners and cleaned the count house rooms.
