I have just found a George Knight in 1841 1851 and 1861 about right age right area a Parchment Maker so that definitely rules this cert out, pleased in a way as I didn't feel right about it but back to square 1

I have been looking. I think it's likely that is your George with James in 1871. Can't see another likely Visitor of same name, age and pob
I have looked out of County but nothing obvious unless he ended up in a County institution later in life.
Nothing on that new UK site for inpatients in Asylums though
The family all seemed to stay in Southwark although you say there is a death for James in Hackney. Is that a definite?

Val I think that is the George White who was aged 69 at the time of his death in 4th quarter of 1871 St Olaves.
I can't see anyone in the Southwark area fitting the George White who was 79 at the time of death 4th quarter of 1871 St Olaves. However he could have just appeared in the area prior to his death.

I was just wondering if there was any other way of further elimination. Perhaps Southwark Registry Office would be willing to help with whittling it down a bit. It may however just say Retired but an address would help. They were at Pages Walk for a long time. Worth a try to avoid wasting the fee.

He is very elusive Val. The only two possibles I could find for those White deaths St Olave 3rd q of 1871 were George, the Waterman and George, the Tanner. George the Waterman was a reasonable fit but George the Tanner didn't seem to fit as he was 71 when he died. However, his dob's varied through the Census.
I did see a possible but born in Aldersgate who died Holborn WH and there was a non com burial in Hackney for a George Knight address Union Place, Bermondsey but he was buried before the 1871 Census.
He will come to light sometime Val, fingers crossed.
