I know nothing of this man. He appears on a marriage certificate dated 3/10/1850 at St George the Martyr, Middx. He his father of the groom but that's all I know and my feeble brain wont work out my options for research.....................can anyone help please.

cannot find him except there is a death for a Simon Collard in 1857 Shoreditch but where is he in 1851?

Can't find Simon in Freedoms nor Apprentice Taxes. Can't find baptism of Charles. And where are they in 1841??

Charles Collard, the son shows up in 1851 Census living in St Pancras. He states he is 32 years old born Henbury, Gloucestershire and is a Police Constable.

The most likely Charles in 1841 is a labourer, living in Henbury with a Jane Collard (possible sister?) -

Henbury is a suburb of Bristol, and there is a death in Bristol of a Simon Collard in 1838. Perhaps he was deceased in 1850 and Charles just didn't mention it.

I have been following a Simon P Collard who was a shopkeeper in Somerset in 1841 and 1851 (so nearby) but he turned out to be a draper in later census.

The 1851 census for some London boroughs was damaged I think.

There's a Simon COLLARD, with wife, Rachel, living in Chelsea in 1841 and 1851. He was born about 1780 in Somerset... but he's a journeyman carpenter.

Just had a look at the Gloucestershire baptisms, read only on Anc*

Have found an Emily, James and William all baptised 26 Dec 1813 at Henbury, John Baptised 5 Nov 1814, parents Simon and Mary.

I wonder if you rang the GRO they would send you the death cert in Bristol only if he was listed as a butcher?
The reference for that one is Simon Collard - June 1838 - Bristol 11 122.

A possible marriage for Simon Collard is to Mary Woodruff 6th Feb 1804 Bristol.

I can't see the other Simon Collard in Bristol in 1841 either though. He was married to Sophia. So the death could also be him. He only married in 1833, so wouldn't have been married long.
