There were a number of reasons for deep graves, one was it was envisaged as a family plot and the depth allowed for more burials, another was to protect from grave robbers who would not be able to dig deep overnight.
Another reason was simply to avoid the burial being disturbed at a later date.
Do not forget in the past there were instances of coffins being smashed when new graves were dug, remains being exposed at times of flood, tales of foxes and dogs digging into graves and exposing bones etc. so people took precautions.
