who is he Hermann or Hofkke (hoffkey)

Hi I'm new to this site wonder if you can help please
From my recherch I found my G/Granddad born brelin 1816 He went by the name John Gottlieb Hermann!!!(Hoffke) he was a profesor of music
I can find three children Dorothea and louis on 1861 cencus, Theodore through other relaions.
The only other information I can find is on the 1841 census where I find a John Gottlieb Hermann Hoffke (music proff) with wife Louisa and son Theordore (forn Parts)
Louisa passed away in 1958 as far as I can tell, and John remarried in 1859 without the hoffke part of the name
I Cant find anymore Hoffke
What I need to know, is this the same person did he move from Germany to France then to the uk if so did he change his name for a reason? I just cant work it out

I have a strange naming pattern in my German family

I have Johann Paul Hubert Klein, he marries Franzisca Antonie Krauss. He calls himself Paul Krauss Klein and she is Antonie Krauss Klein. On all census returns they use the surname Klein but on all legal documents, birth certs of thier children etc they use Krauss Klein.

When Paul's father John dies he calls himself John for a while then when their son Joseph dies at an early age Paul signs himself Paul Joseph. It's a nightmare trying to figure out who is who.

I do not understand though did he drop the Hoffke at some stage because I cant find any on census after 1841
the one for Louis he was born in 1851 according to his marrage certificate I have and on it his father is Hermann
