I thought her first name looked like Sophia, but can't make out the surname.
Is it a GRO copy cert? You could always phone the local register office and ask if they can look at their original - you have the exact date and church so it shouldn't be difficult for them to do.
I'm with everyone on the Sophia bit the surname baffles me.
This is a copy from the parish registers, had wondered (at a push) if the surname was Bemrose/Bemrole but thought it could be middle name E then capital S..

Elaine, Just as a matter of interest is this the same Jane Whitworth who in 1851 was listed with her friend Julia Duke nee Pocklington, also from Elston, living at Forestside Nottingham.
Jane was listed as being 18 years old and a milliner and dressmaker.
Julia, her friend, was also from Elston and her father was also a butcher.
Julia was my Great great grandmother.
If this is the same Jane then she would have been 41 years old at her marriage, do you have any information that could prove this? As I said, this is only a matter of interest as the rate of coincidence is so high and I am sorry to say that I cannot help much on your query about the witness name,
Just to eliminate & looked at the 1871 & 1881 census for Elston & only found one Sophia which is what the name looks like to me in 1871 as a servant b 1832 with the surname Chambers! Don't think it looks like this.
Two in 1881 both with the surname Caunt but niether matching b date, nearest is 1826
There are 2 marriages for Sophia Bemrose in Newark in 1875 one June and one Dec
I wonder if she links to the Bemrose families from Marston, Lincs (between Grantham and Newark), i have one of the Bemrose girls (a 2xgrt grand aunt) from there who married in Basford Notts 1847, the family she married into have branches from Marston and Collingham.

Am tracking this marriage as my Ward marries an Appleby in Scarborough. My Ward side is from Newark and all fishmongers plus we have a Postcard early 1900's sent by another Appleby to Scarborough from Newark and we are tracking round to see the connections. Don't know anything about the Whitworths as such yet and have found Jane in East Stoke later on, will keep your info in hand just in case.

looking back over my notes it seems i don't have as many census returns for Mary as i thought. For some reason i had her pob as Marston circa 1819 but the 1881 and 1901 show Hougham, Lincs.
Her hubby was Valentine Goulson, born c 1820, Knipton, Leics (just a few miles from Marston which has several Goulson family lines). There are several Valentine Goulson entries in my tree and they all originate from a small area around Knipton, Grantham and Marston so i sometimes confuse them without checking the file :o
Although married at Basford in 1847 the family moved to Lincoln by 1849 and they had several children between 1849 and 1862-3. Both Valentine (in 1876) and Mary (in 1902) died in Lincoln
